Cultivating Tradition with Sustainable Practices
At Košara Agricultural Estate, we are excited to be in the process of planting over 1,500 olive trees across 7.5 hectares of land. Using sustainable practices that are common for our region, our goal is to produce eco-friendly olive oil as well as table olives that will embody the raw natural beauty of this unique island.
It is said that the tradition of olive cultivating in the Mediterranean is as old as the civilization itself. Same can be applied to Dalmatia and Zadar region. Honouring this heritage, we are planting native olive varieties that have been cultivated here for generations. Our focus is on Oblica, Lastovka, Drobnica, and Levantinka – each well adapted to the local climate and soil conditions and known for producing high-quality olives with distinct flavours.

Our Olives – A Commitment to Tradition
- Oblica – the most important and widespread Croatian cultivar. The fruit is known for its round shape, smooth, mild taste, perfect for creating a delicate and fruity olive oil.
- Lastovka - named after the swallow bird (Croatian: Lastavica), as the leaves resemble the tail of this little bird. These olive trees are highly drought- and disease resistant and the olive oil, although somewhat bitter, contains many healthy antioxidants.
- Drobnica - the oil made with the Drobnica variety is characterized by its distinct flavour, very sharp with a good bittersweet balance. At first, it is fruity and slightly bitter, later it becomes pleasantly spicy. The colour is golden with green shades.
- Levantinka – with its rounded crown and smooth bark on its branches giving it an elegant appearance it is often considered the “beauty” of olive groves. Fruit is medium-large, elliptical, elongated and slightly curled upwards. The oil has a sweet taste.

Eco-Friendly Production
From the careful planting of each tree all the way to the eventual harvest, we will embrace sustainable practices and prioritize organic and eco-friendly farming techniques that avoid synthetic pesticides and fertilizers. This approach will allow us to preserve the health of the soil and reduce harm to beneficial insects and local wildlife.
