Reviving Ancient Winemaking Traditions
Next to our olive groves, another iconic Mediterranean tradition will take root – the vineyards. Dalmatia’s wine making heritage stretches back over 2,000 years to ancient Greek and Roman eras. Historically, winemaking in Dalmatia was more than just a local craft. It was an essential part of daily life, deeply intertwined with the region’s culture and economy. Recognizing this deep connection, our agricultural estate will be dedicated to producing exceptional wines with the strong focus on sustainability. Currently in the process of planting 4,900 vines across 1 hectare of land, we are carefully selecting grape varieties that will thrive in the beneficial Mediterranean climate of Košara.

Our Grapes
A Legacy of Local Varieties
As our vines take root, we look ahead to wines that will embody the true essence of Košara Island. Each future bottle will reflect the unique combination of our local grape varieties and sustainable farming practices.
The dominant cultivars on our estate will include Babić, Merlot, and Plavina. Each of these grapes is renowned for their distinctive flavours and the rich heritage they will bring to our future wines.
- Babić - native dalmatian red grape variety. Babić wines are inky and dense in appearance and full-bodied, thanks to the variety's generous tannins. The most common flavours to experience in these wines are plums, dark berries, figs and sometimes tobacco and spice.
- Merlot – even though its spiritual homeland is France, this globally known variety can also be found across Dalmatia. It has a smooth, velvety texture with rich notes of ripe berries and a balanced finish.
- Plavina - another native variety closely related to renowned sorts such as Babić and Plavac Mali and sharing genetic links with the famous Zinfandel. Plavina offers bright red fruit notes like cherry, raspberry and plums often with subtle herbal or spicy undertones.

At the heart of our wine production is the commitment to sustainability. On our 1-hectare vineyard, we are implementing eco-friendly practices to ensure each vine grows in harmony with the land. From organic soil management to environmentally conscious vineyard care, we will avoid synthetic chemicals and prioritize methods that will protect the land for future generations. This approach will result in wines that are not only of exceptional quality but also produced with the utmost respect for the environment.
